As the liquid is sticky, the suspended droplets can't move around so easy to combine in a specific area. Emulsion stability is important in several industrial applications which include coatings, food products, agriculture formulations, personal care, and petroleum. It is used in everything from a sauce, which needs to stay emulsified for as long as it would take a diner to eat it, to ice cream, which needs to stay emulsified to avoid the ice crystals.
