Cassia gum is a natural gelling agent which consists of 75% high molecular weight. It is made of endosperm of cassia tora seeds or cassia obtusifolia which grows in various parts of India. The powder of cassia gum is used as an emulsifier, thickener, texture, foam stabiliser and moisture retaining agent. In addition it is used as a texturing agent in meat, frozen dairy desserts, cheese, dairy mixes and poultry products. Moreover, 1 to 2% of the cassia oil is found in cassia tora plant which gives a spicy aroma and contributes towards the taste in human food stuff.
