Coagulants are enzymes that break down kappa casein, part of the milk protein, results in cheese curd formation. It is used in the process of manufacturing cheese for the curdling process. A variety of milk coagulants are available in the market but the first milk coagulants used for making cheese was rennet. Milk coagulants are also required in households for making cheese. Milk coagulation is influenced by factors such as chemical composition, milk acidity, somatic cell count, as well as the coagulating enzyme source and concentration. The milk coagulation capacity can be measured by means of mechanical or optical devices, such as near-infrared, mid-infrared spectroscopy, and Lactodynamographic analysis.
