It is produced from sucrose by certain lactic acid bacteria of the lactobacillus. Species used to produce the dextran are Leuconostoc mesenteroides and Streptococcus mutans. Medicinally dextran is used as an antithrombotic to reduce blood viscosity and as a volume expander in hypovolemia. It is used in some eye drops as a lubricant. It has many health benefits.
