Isoamyl Alcohol, also known as Isopentanol is a clear, colorless, liquid organic compound that is one of numerous isomers of amyl alcohol. Isoamyl alcohol is used as a solvent for preparing the synthetic fruit flavours, such as apricot, banana, greengage, malt, orange, plum and whiskey flavours. It is a major ingredient in the production of banana oil, a natural ester used in the flavoring industry. The isoamyl alcohol is less dense than water, soluble in water, and floats on water. It is mainly used in industry like food additive and flavoring agent and is manufactured from light petroleum by fractional distillation.
