Fortified Egg is modified egg which is enriched with micronutrients which is modified from the standard eggs. These eggs are nutritionally enhanced and value added eggs. It is also known as vegetarian eggs and eggs with modified fat content. It is produced from hens which are fed on grain diet which is free of animal fat. It contains less amount cholesterol, less saturated fat. The level of cholesterol in modified fat eggs is 190 mg per egg in comparison to 215 mg in generic eggs and saturated fat content 1 g in generic egg.
