Clean labels and natural citrus fiber provide multiple functionalities that can be used to improve product texture, nutrition, costs, and labeling. It can also be used as a replacement for chemical or synthetic ingredients. The emulsifying properties make citrus fiber a possible egg and oil replacer in baked foods.
