Gellan gum is a water-soluble polysaccharide produced by fermentation of a pure culture of Sphingomonas elodea used for a food additive. This multifunctional gelling agent can be used alone or in combination with other products to produce a wide variety of interesting textures. Its main application is to bind, stabilize, or texturize processed foods. It is primarily used as replacement for other gelling agents because it’s effective in very small amounts and produces a clear gel that isn’t sensitive to heat.

“As per USFDA- Code of Federal Regulation 21, the food additive gellan gum should be used safely in the food. The additive is a high molecular weight polysaccharide gum produced from Pseudomonas elodea using a pure culture fermentation process and purified with isopropyl alcohol recovery. Each Tetrasaccharide repeat unit contains one molecule of Rhamnose, one molecule of glucuronic acid, and two molecules of glucose. The Glucuronic acid is converted into a potassium, sodium, calcium, and magnesium salt mixture. As O-glycosidically linked esters, the polysaccharide may contain acyl (glyceryl and acetyl) groups. In accordance with current good manufacturing practice, the additive is used or intended for use as a stabilizer and thickener. Where standards of identity established under section 401 of the Federal Food, Drug, and Cosmetic Act do not restrict such usage, the additive may be used in foods.”
