Wheat Malt is one of the most common malted grains utilized in brewing. Malt is made from soaked grains that have been germinated (sprouted) and dried. It can be made from a variety of grains, including wheat, corn, and rice; however, whole-grain barley is the most commonly used. Changing the length and temperature of the drying process results in a wide range of barley malts with a wide range of flavours and colours. Brewer's malts are high in active enzymes, starches, and sugars, all of which are required in the fermentation process. Other types of barley malts have lower levels of enzymes and sugars available for fermentation and are thus used as flavouring agents more frequently. Some American craft brewers have recently become captivated by barley wine made by wheat wine, replacing them with a large proportion of barley malt in the grist with wheat malt.
